Colombian Single Origin Coffee – Manantiales Red Bourbon
The Manantiales farm in Valle del Cauca, Colombia, cultivates this Red Bourbon coffee. Jorge Isaza grows it at 1,500 to 1,950 meters altitude. The washed process yields 85 SCA points. It features chocolate and almond aromas. The taste includes chocolate, caramel, red apple, and a malty hint with fresh wood. The acidity is mild, and the body is medium.
A unique micro-climate with fog until midday enhances the beans’ slow growth. This process boosts their sweetness. Jorge Isaza and Maria Mercedes Grajales have partnered with the local community for over nine years. They create jobs and educate workers on best practices. The farm holds Rainforest Alliance certification.
Sixteen natural wells supply water to the farm and community. A virgin rainforest area, where the wells originate, remains preserved. Wildlife roams freely there, as hunting is banned. The farm avoids mono-crops, sharing space with various trees and crops. It uses micro-lots for traceability, revealing the coffee’s exact origin and care.
